The liquorice has its distinctive flavour because it is made from the finest liquorice powder, and because it is created by the Maillard reaction, where milk protein and sugar react with each other in the pot. After cooking, the liquorice is poured into moulds, where it sets overnight. It is then cut and passed through a veil (or curtain) of liquid chocolate. After drying, it is ready to eat.
